Ingredients:

  • 3 ripe bananas
  • 1/2 cup unsweetened applesauce
  • 1/4 cup maple syrup or honey
  • 1/4 cup Soulffee's - Mushroom Orzo
  • 1/4 cup vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • Optional: 1/2 cup walnuts or peanuts

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

  2. Mix Wet Ingredients:
    In a large mixing bowl, combine the mashed bananas, applesauce, maple syrup (or honey), Soulffee, vegetable oil, and vanilla extract. Stir until well combined.

  3. Combine Dry Ingredients:
    In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.

  4. Combine Mixtures:
    Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined. Be careful not to overmix. If desired, fold in the walnuts or peanuts.
